
Hamburg has a diverse organic offer – from groceries to restaurants. According to Bioland (one of the biggest German organic food certification orgs), it is the 2nd most organic city in Germany (#1 Munich). Naturally, it is not too difficult to find a good organic butcher here. And one of my favorites is Dreymann.
Let’s have a quick overview of Dreymann:

- Look & feel: bright red, you can see the meat structure well
- Overall taste: aromatic & juicy, slightly chewy but still tender (despite we overcooked it – more than just medium…)

- Repurchase intention (out of 5 🥟): 4 🥟 (again, this is also not an everyday food. But if price isn’t an issue, go for it any time you fancy a good steak.)

In Germany, you can get meat relatively cheaply (compared to the overall price in Taiwan considering the cost of living there) – from the meat counter at supermarkets to your local butcher shops. However, the quality really varies from shop to shop. My impression is that from the quality (and price) perspective: Bio local butcher shop ≥ local butcher shop › supermarket meat counter ≥ packed meat at supermarket (as it is sometimes just the same product from the counter but pre-vacuumed). I don’t often go to a bio/organic butcher shop, as there isn’t one close to my place, but if I want to treat myself to a juicy, buttery piece of steak, my first choice is Dreymann.
As one of the most well-known bio butchers in Hamburg, they certainly have good reasons for that: high-quality meat and proudly made meat products, alongside their famous „Wagyu Pastrami Sandwich,“ which is considered possibly the best pastrami sandwich in Hamburg or even Germany. Not to mention, their staff is friendly and helpful when it comes to choosing the right meat for your needs. Additionally, they are quite accessible, with 17 selling points across Hamburg.

Founded in 2002, the bio butcher is rooted in the core values of „Appreciation“ (Wertschätzung) and „Added-value“ (Wertschöpfung). They demonstrate gratitude and respect toward both individuals and animals, prioritizing their wellbeing and ensuring proper care. Their primary collaboration is with the regional farm Gut Wulfsdorf in Ahrensburg, which also operates a market truck offering fresh vegetables, fruits, and some dairy products directly across from the Dreymann truck in Eppendorf. Dreymann’s commitment to producing meat products in a more sustainable and ethical manner is reflected in the exceptional quality of their offerings, and surely their premium pricing.
For the dinner, we selected Rumpsteak for a simple reason: it offers excellent value for money – it’s rich in flavor without being overly fatty. The texture is satisfying and tender. It’s relatively easy to prepare. Plus, the price is quite reasonable (the same cut from Wagyu would cost twice as much). We had tried it before and were delighted with the results. While I may not be a steak enthusiast and lack extensive knowledge about different cuts, I simply enjoy savoring a tender, juicy piece.
